Breakfast Bar Wins IFT Heart-Healthy Competition

A heart-smart breakfast bar including canola oil won first place Feb. 28 in the 2013 Heart-Healthy Product Development Competition sponsored by CanolaInfo and organised by the Institute of Food Technologists (IFT). The contest, now in its third year, challenges food science students to develop a heart-healthy product made with canola oil. The winning product, “Simply Heart,” was created by two undergraduate students from the University of Arkansas. It has a banana- and cinnamon-flavored filling made of oats, sweet potato flour, dried fruits, canola oil and almonds that’s coated with puffed millet. Rutgers University took second place with “Herbilicious Crisps,” thin chips made of a quinoa-based flour blend and flavored with Italian herbs and roasted seaweed powder. Iowa State University placed third with “SmHeart Bites,” a layered, mini cottage cheese cake with a purée made from aronia berries grown in Iowa.
