Celebrate "Mother's May the Healthy Way" with Ellie Krieger

CHICAGO – Mother’s Day is a time to celebrate moms everywhere – from breakfast in bed to family gatherings. Instead of one day, however, make your celebration last an entire month with the “Mother’s May the Healthy Way” recipe collection from CanolaInfo. These recipes show you how to make classic brunch items heart-healthy with fun culinary twists.

“In developing these recipes, I wanted to come up with elegant yet easy-to-make dishes for families to show mom how truly appreciated she is,” says Ellie Krieger, M.S., R.D., host of the Cooking Channel’s “Healthy Appetite” and developer of the recipe collection. “The gift of heart-healthy cooking is a wonderful way to express love while promoting well-being.”

To make her recipes heart-smart, Krieger uses better-for-you ingredients such as canola oil, egg whites, low-fat milk, whole-grain flour and yogurt. Using these alternatives to less healthy ingredients helps keep calories and saturated fat in check as well as adds nutritional value without compromising taste.

“These recipes contain a variety of herbs, fruits and vegetables to take advantage of nature’s bounty and add wonderful colors and flavors,” says Krieger. “From golden brown waffles to savory crêpes and strata, a colorful baked egg dish, this recipe collection is sure to win over mom’s heart.”

Each heart-warming recipe contains less than 400 calories per serving and is low in saturated fat. A common ingredient in all recipes is canola oil, which has the least saturated fat and most omega-3 fat of all common culinary oils and is free of trans fat. Recipes include:

“These dishes are great for special occasions with their enticing colors and flavors” says Krieger. “Making one or more of them for mom will allow her to sit back, enjoy her honorary month and taste how delicious heart-healthy meals can be.”
