Green Beans with Almonds and Cranberries
Ingredients
- 4 cups green beans, tops and tips remove 1 L
- 1/2 tsp salt 2 mL
- Vinaigrette
- 3 Tbsp canola oil 45 mL
- 2 Tbsp apple cider vinegar 30 mL
- 1 tsp vanilla extract 5 mL
- 1/2 tsp salt 2 mL
- 1/2 tsp ground black pepper 2 mL
- 1/2 tsp dill 2 mL
- 2 Tbsp chopped almonds 30 mL
- 2 Tbsp dried cranberries 30 mL
Instructions
- 1. In large saucepan, cover beans with water. Heat over medium-high heat and cook for 4 minutes or until tender. Remove from stove and place beans in cold water. Drain and reserve.
- 2. In small bowl, combine all vinaigrette ingredients.
- 3. Add green beans to vinaigrette and toss. Garnish with almonds and cranberries.
Yield
4 servings.
