This traditional Irish baked good can be enjoyed any day of the year, not just St. Patrick's Day. Using canola oil reduces its saturated fat content.

Ingredients

  • 4 cups 4 whole wheat flour

  • 1 cup 1 all-purpose flour

  • 2 Tbsp 2 granulated sugar

  • 1 1/2 tsp 1 1/2 baking soda

  • 1 tsp 1 salt

  • 2 1/3 cups 2 1/3 buttermilk

  • 1/4 cup 1/4 canola oil

Directions

  • Preheat oven to 350 °F. Prepare 9 x 5 x 3-inch loaf pan.
  • In large bowl, combine flours, sugar, baking soda and salt. Mix together and make a well in center. Add buttermilk and oil. Stir until just moistened.
  • Add dough to loaf pan and bake for about 1 hour. Remove loaf from pan and let cool on wire rack.
