  • 1/4 1/4 onion, sliced into strips

  • chicken breasts, 12 oz (350 g), cooked and shredded

  • 3 3 tomatoes, grilled*

  • 2 tbsp 30 ml chopped pickled jalapeños**

  • 1/2 cup 125 ml water

  • 1/2 tsp 2 ml fresh oregano, chopped

  • 1 1 chipotle chile, chopped

  • 4 4 corn tostadas

  • 1/2 1/2 small red onion, diced

  • 1/2 1/2 avocado, diced

Directions

  • In sauté pan, heat canola oil over medium-high heat. Add half of garlic and onion and sauté until brown. Add shredded chicken and pepper. Cook until heated through.
  • In saucepan over medium heat, combine tomatoes, remaining garlic, jalapeños, water, oregano and chipotle chile. Bring to a boil. Remove from heat.
  • To serve, warm tostadas and divide chicken mixture equally on each tostada. Garnish with onion and avocado.

Notes

  • Note: * To grill tomatoes, slice in half and remove pulp and seeds over sink. Place face down on grill or grill pan for 2 to 4 minutes.
** Beware, this dish is spicy hot, so use fewer jalapeños to tame it down to taste.

Making a stir fry is a fun and exciting culinary experience with a certain exotic flare. Here, I use a combination of asparagus, onions and bell peppers to add crunch and nutritional value to the dish, and recommend pork tenderloin to satisfy the meat eaters. For a proper stir fry, you need three things: a wok, great flavor and high heat. Canola oil has a high smoke point and neutral flavor so the rest of the ingredients can really shine. Best way to serve a stir fry? Try pairing it with whole grains, like brown rice or quinoa.

A twist on the popular Southern barbecue dish, this “pulled pork” is infused with rich, exotic flavors, plus hints of chili and orange. Canola oil’s mild taste helps those flavors sparkle. The meat is wrapped in tortillas and garnished with shredded lettuce, cilantro or mint sprigs, green onions and a dash of sour cream for a sensational meal.
