Fresh Pasta Salad with Sweet Onion Vinaigrette

Ingredients

  • 3/4 lb 350 g bow tie pasta (about 4 1/2 cups)

  • Vinaigrette
  • 1/4 cup 60 ml rice vinegar

  • 1/2 cup 125 ml canola oil

  • 1 tbsp 15 ml low-sodium soy sauce

  • 2 tsp 10 ml brown sugar

  • 1/2 tsp 2 ml salt

  • 1/2 tsp 2 ml red pepper flakes

  • Salad
  • 15 15 cherry tomatoes, cut in half

  • 1 1 yellow pepper, finely chopped

  • 1/2 cup 125 ml fresh basil leaves, thinly sliced (chiffonade-style*)

  • 1/4 cup 60 ml thinly sliced green onion

Directions

  • Cook pasta according to package instructions. Once cooked, drain and cool.
  • To prepare vinaigrette: In bowl, whisk all ingredients until combined.
  • In serving bowl, combine pasta, tomatoes, pepper and basil. Add vinaigrette. Stir to combine. Garnish with green onion.

Notes

  • Tip: To chiffonade herbs such as basil or mint, stack about eight leaves together and then roll them lengthwise into a cigar shape. Thinly slice across the bundle to make thin ribbons.
