Greek Lentil Salad

This salad is perfect for get-togethers. It tastes even better the next day! The lentils add a delicious twist or you can susbsitute black beans instead. Be sure to rinse and drain if using canned.

Ingredients

  • Salad
  • 2 cups 2 lentils or black beans, cooked

  • 1 cup 1 chopped cucumber

  • 1/2 cup 1/2 chopped red onion

  • 2 2 tomatoes, chopped

  • 1 1 yellow pepper, chopped

  • 1 cup 1 chopped cauliflower

  • 1/2 cup 1/2 chopped parsley

  • 1/4 cup 1/4 feta cheese, crumbled

  • 1/2 cup 1/2 sliced black olives

  • Vinaigrette
  • 2 Tbsp 2 lemon juice

  • 1 tsp 1 pepper

  • 1 Tbsp 1 red wine vinegar

  • 2 cloves 2 garlic, minced

  • 2 tsp 2 dry crumbled oregano

  • 2 tsp 2 dry crumbled parsley or mint

  • 2 tsp 2 dry crumbled basil

  • 1/3 cup 1/3 canola oil

Directions

  • Combine salad ingredients.
  • In a separate bowl combine vinaigrette ingredients. Pour over salad mixture. Stir to combine.
  • Pour vinaigrette over salad mixture. Stir to combine.

Notes

  • The low saturated fat content of canola oil keeps it free-flowing in the fridge.
