Serve this delicious cake topped with a creamy cream cheese frosting at your next family gathering.

Ingredients

  • canola oil cooking spray

  • 1 cup 250 ml granulated sugar

  • 1/2 cup 125 ml canola oil

  • 1/2 cup 125 ml applesauce

  • 3 3 eggs

  • 1 1/2 cups 375 ml grated carrot

  • 1/2 cup 125 ml walnut pieces

  • 1 1/2 cups 375 ml all purpose flour

  • 1 1/2 tsp 7 ml baking powder

  • 1 1/2 tsp 7 ml baking soda

  • 1 1/2 tsp 7 ml ground cinnamon

  • 1/2 tsp 2 ml salt

  • 1/3 cup 75 ml non-hydrogenated canola margarine

  • 1 1 pkg cream cheese, softened (4oz/125g)

  • 2 cups 500 ml icing sugar

  • 1 tsp 5 ml vanilla

  • 1 tbsp 15 ml orange juice

  • 1 tsp 5 ml grated orange peel

Directions

  • Preheat oven to 350°F (180°C). Spray a 13 x 9 inch (3.5 L) rectangular pan with cooking spray.
  • In smaller bowl, whisk sugar, canola oil, applesauce and eggs until smooth. Stir in grated carrot and walnuts.
  • In large mixing bowl, combine flour, baking powder, baking soda, cinnamon and salt.
  • Stir liquid mixture into flour mixture, and mix just until flour is moistened. Spread batter in prepared pan. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool cake in pan set on wire rack.
  • For frosting, cream margarine and cream cheese together. Adding icing sugar, vanilla and enough orange juice to make a fairly stiff icing.
  • Ice cake and sprinkle with orange peel. Chill to set icing.
