This hearty twist on salsa has a nice balance of spice and texture. Canola oil helps all the flavors meld together.

Ingredients

  • 4 4 tomatillo, finely chopped

  • 1 1 jalapeño, deveined, finely chopped

  • 1/2 cup 125 ml coarsely chopped cilantro

  • 1/4 cup 60 ml finely chopped red onion

  • 2 cups 500 ml cooked or canned black beans, rinsed and drained

  • 3 tbsp 45 ml canola oil

  • 1 1/2 tbsp 20 ml lemon juice

  • 1 1/2 tbsp 20 ml cider vinegar

  • 1/4 tsp 1 ml salt

  • 1/2 tsp 2 ml dried oregano flakes

  • 1 1 medium-sized avocado, chopped

Directions

  • In bowl, combine all ingredients. Stir to combine.
  • Serve as side dish or appetizer.
