Basic Crepes

Crepes are very versatile and make an excellent main course, appetizer or dessert. Fill with shrimp or chicken in a creamy sauce, sauteed vegetables and cheese, or with fresh berries and whipped cream. Canola oil's neutral flavor works well with sweet or savory fillings.

Ingredients

  • 3 3 large eggs

  • 1/4 cup 1/4 canola oil

  • 3/4 cup 3/4 all purpose flour

  • 1 Tbsp 1 granulated sugar

  • 1/4 tsp 1/4 salt

Directions

  • Using blender or whisk, mix eggs, canola oil and milk until blended. Add flour, sugar and salt, continuing to blend until well mixed.
  • Brush medium frying pan or crepe pan with canola oil. Heat pan on medium high heat. Quickly pour about 3 Tbsp of batter into pan and tilt in all directions until coated evenly. Cook for about 1 minute and remove from pan and let cool. Place wax paper between each crepe to prevent them from sticking together.
  • Serve warm or cool, rolled or folded around your choice of filling.

Notes

  • Crepes can be refigerated for up to 2 days or frozen for up to 1 month.
